It's an iPod Touch 4 and is running on iOS 5.1. Please help, I want it off

I selected only one photo album for my itouch to sync with, but there are two photos albums instead. One is called photo library and shows a sunflower as the icon, and the other one has a photo that I removed as its icon. I just inherited my mother's old iphone 3 a step down from my iphone 4 P and she has 14 different photo albums besides Camera Roll. I cant seem to get rid of them Ive connected the phone to iTunes, gone to the photographs tab, selected " sync selected albums" , and then check marked the ones I wanted on the phone. Then I re synced the phone and supposedly all the albums that I didn't check would be deleted..... that didn't happen All of her photos are clogging up my data and slowing the phone down which is totally frustrating. What should I do? Please and thank you
